To replace 1 egg, you can try any of the following:
- ½ large mashed banana (you may need to add additional TBSP water if your mix seems too dry)
- ¼ cup plain pureed pumpkin
- 1 TBSP flax seed & 3 TBSP water
- ¼ cup applesauce
- ¼ cup aquafaba (aka bean juice – yes just the juice from a can of beans – garbanzo beans work great!)

I have tried every gluten free kind of flour on the market. Including making my own by tweaking the ATK blend, and absolutely nothing bakes like this! Not sure what you do differently, but now I have mass quantities of all the ingredients to make the ATK blend at home, and I don’t use anything but Josie’s Best! I live in Alaska and will wait any extra shipping time or pay more, just to be able to enjoy baked goods. Especially around the holidays. No need to find special gluten free recipes, just sub regular flour for this and you’re good to go! So glad I found this company.
