Gluten Free Crepes Recipe – Simply Perfect

You don’t need to get fancy to really enjoy crepes. Work on perfecting the technique and top them with a sprinkle of powdered sugar and a squeeze of lemon — always delicious! Alternatively, fill them with a spread of your favorite jam. You can’t go wrong!

Ingredients
- 1 cup Josie’s Best GF Crepe Mix
- 1 large egg (or your favorite egg alternative)
- ½ cup + 2 tsp water
- ½ cup milk of choice (dairy or plant-based)
- ½ tsp vanilla extract
Simple Toppings
Powdered sugar
Fresh lemon wedges
Your favorite jam or fruit spread
Makes about 8–10 crepes

Prepare the Batter In a mixing bowl, combine 1 cup of Josie’s Best GF Crepe Mix with the egg, water, milk, and vanilla. Whisk until completely smooth. The batter should be thin, similar in consistency to heavy cream. No need to let the batter rest — you can start cooking right away. Give the batter a quick whisk between batches to keep it smooth.

Cook the Crepes Heat an 8–12 inch nonstick skillet over medium heat and lightly grease with cooking oil or spray. Pour about ¼ cup of batter into the hot pan, immediately swirling the pan to create a thin, even layer. Cook for 1–2 minutes until the edges look set and the bottom is lightly golden. Flip gently with a stiff spatula and cook the second side for another 30–60 seconds.
Repeat with the remaining batter, whisking the bowl between batches. Stack finished crepes on a plate or keep them warm in a low oven (200°F).

Serve Sprinkle with powdered sugar, squeeze fresh lemon juice over the top, or add a spoonful of your favorite jam. Fold, roll, or serve flat and enjoy immediately!
