Gluten Free Coffee Cake
With warm spices and apples on top
This is the unfussy fall bake. Simple gluten-free apple coffee cake with apples right on top — nothing fancy, just cinnamon, a little cardamom, and that cozy smell while it bakes. Made with Josie’s Best GF Muffin & More Mix, it’s the kind of recipe you can actually make on a regular morning and still feel like you did something special. Slice it warm, pour the coffee, and call it breakfast.

Ingredients

- 1½ cups Josie’s Best GF Muffin & More Mix
- ½ cup sugar
- ½ tsp salt
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 tsp cinnamon, plus 1 tsp more for the top
- ½ tsp nutmeg
- ¼ tsp cardamom
- ½ cup melted butter, slightly cooled (dairy-free butter works too)
- 1 tsp vanilla
- 2 egg
- ½ cup full-fat yogurt (dairy-free yogurt works too)
- 1 tart apple, cored and thinly sliced (peel if you like; Granny Smith is great here)
- 1 Tbsp turbinado sugar, for the top (optional)
Instructions
- Preheat oven to 350°F. Grease a 9-inch pie pan or 8-inch cake pan.
- In a bowl, mix the Muffin & More Mix, sugar, salt, baking powder, baking soda, cinnamon, nutmeg, and cardamom. Set aside.
- In a separate bowl, whisk the melted butter, vanilla, eggs, and yogurt until combined.
- Gently mix the dry ingredients into the wet. Stir until there are no dry streaks left — don’t overmix.
- Pour the batter into the greased pan. Arrange the sliced apples on top.
- Sprinkle with the extra 1 tsp cinnamon and the turbinado sugar.
- Bake 40–45 minutes, until a toothpick in the center comes out clean or with a few moist crumbs.
- Let it cool a bit, then slice and enjoy with coffee.
