Gluten Free Peaches and Cream Yogurt Loaf
This is late-summer baking at its easiest: a tender gluten free loaf with peaches tucked through the middle and a yoghurt custard baked over the top. It uses Josie’s Best The Muffin & More, comes together in two bowls, and tastes like the good part of August — the slice you cut while it’s still a little warm, and the one you go back for with coffee the next morning. If peaches have already left your market, nectarines work just as well.

Ingredients

1.5 cups Josie’s Best GF Muffin and More Mix
- 1/2 cup butter, melted and cooled
- 1/2 cup sugar
- 3 eggs (2 for the batter, 1 for the custard)
- 1 tsp vanilla
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup plain yogurt, divided
- 1 whole peach, chopped
- 2 Tbsp maple syrup
- loaf pan + parchment
Instructions
Heat the oven to 350°F. Line a loaf pan with parchment. Melt the butter and let it cool.
In a bowl, mix The Muffin & More, baking powder, baking soda, and salt. Set aside.
In another bowl, mix 1/2 cup of the yogurt, 2 eggs, the vanilla, the sugar, and the cooled melted butter until well combined. Add the dry mixture in two parts, mixing just until it comes together — don’t overdo it.
Add a third of the batter to the pan (it will be thick). Layer a third of the peaches on top. Add the next third of batter, then the next third of peaches. Finish with batter on top. You should still have about a third of the peaches left (a few tablespoons).
Bake about 40 minutes, until the top is fully set and not jiggly.
While it bakes, mix the remaining 1/2 cup yogurt, the remaining egg, and the maple syrup until very smooth.
Take the loaf out. Pour the yogurt custard over the top. Scatter the remaining peaches. Return to the oven until the custard is fully set — not wet, not jiggly — about 20 minutes.
Remove the loaf from the oven and cool in the pan about 20 minutes. After, use the parchment to lift it out, then let it cool at least another 20 minutes before you peel the parchment off. Enjoy.
Nectarines work if peaches have already left your market. The loaf is the constant. The fruit is the season.
