Gluten Free Apple Bread

This gluten free apple bread recipe will fill your home with the most delicious, comforting, cinnamon and apple scents!  The bread comes out moist and bursting with apple and cinnamon flavor. This gluten free recipe comes together fast with simple ingredients.  We use our muffin and more mix for this recipe which is a certified gluten free baking blend.  Our flours work perfectly with rich, moist, quick breads and this recipe is just that! We make this bread often during the fall as it’s just the perfect afternoon snack with a cup of coffee or cider.

Apples to bake with:

  • Granny Smith: Known for their tartness and firmness, Granny Smith apples hold their shape well in baking, making them a popular choice for pies and crisps.
  • Honeycrisp: Sweet, juicy, and firm, Honeycrisp apples provide a nice balance of sweetness and tartness, adding great flavor and texture to baked goods.
  • Braeburn: With a complex flavor profile that’s both sweet and tart, Braeburn apples hold up well in the oven, making them ideal for pies and tarts.
  • Jonagold: A cross between Jonathan and Golden Delicious apples, Jonagold apples are sweet with a hint of tartness and maintain their shape well during baking.
  • Pink Lady (Cripps Pink): These apples are firm, slightly tart, and sweet, making them excellent for baking, especially in recipes where you want the apple slices to hold their shape.

Ingredients

For the Loaf

  • 1 ½ cups Muffin and More Mix (240 grams)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin pie spice (or just cinnamon is fine)
  • ½ cup of granulated sugar
  • 2 large (or 3 small) eggs
  • 1 tsp vanilla
  • Juice from ½ a lemon
  • ½ cup of oil (olive or avocado recommended)
  • 1 whole apple, cored and grated

Topping

  • 1 apple, cored and thinly sliced
  • 2 TBSP brown sugar
  • ½ tsp cinnamon

Instructions

Pre heat oven to 350 and spray a loaf pan with cooking oil (my loaf pan is 9×5 with 2 ¾ depth)

Mix Muffin & More, baking powder, baking soda, salt, and spice together- set aside. 

Mix Sugar, eggs, vanilla, lemon juice, and oil together- whisk well

Add grated apple to the liquid mixture and add to the dry mixture

Mix just until there are no streaks of flour left. 

Pour the batter in loaf pan.

Toss the topping apple with the sugar and cinnamon and arrange on top

Cook for 55-60 mins until a toothpick inserted into the middle comes out with a few moist crumbs. 

Allow to cool before slicing into and enjoying! 🍏

I’ve made this bread so many times now and always love how delicious it turns out! It’s a wonderful texture, not too sweet – lovely in all the best ways!
