Gluten Free Tropical Pancakes

1 Josie’s Best single-use Pancake Packet (or 1 cup of Pancake Mix)
2 large eggs
2 TBS oil
1/2 cup milk of choice
1/4 cup crushed pineapple
1/4 cup unsweetened coconut
1/4 cup dried cranberries
Mix: eggs, oil, milk of choice until frothy. Add the entire single-use Pancake Packet (or 1 cup of mix) and gently mix.
Gently: fold crushed pineapple, unsweetened coconut and dried cranberries into the mix.
Allow the batter to rest 5 minutes.
Heat: lightly greased skillet to medium heat.
Add: 1/4 cup of batter to skillet, add your berry of choice too! Cook until golden brown. Pancakes are ready to flip when bubbles form on the top(uncooked) side.
