Gluten Free Java Chip Cookies

These gluten free Java Chip Cookies came about on a “we need some cookies” family movie night, and they got rave reviews! In fact, I was told they were in the top five cookies I’ve ever made for my family, which is saying something.

Think of these as a fun twist on classic gluten free chocolate chip cookies, with a rich coffee flavor and plenty of chocolate chips. They’re thick and chewy in the middle with perfectly crispy edges. If you love coffee and chocolate together, these gluten free cookies are definitely worth adding to your baking rotation!

PREP TIME 15 Minutes
COOK TIME 15 Minutes
PASSIVE TIME 1 Hour

Ingredients

  • 2 cups Josie’s Best GF Muffin and More mix
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1  tsp salt
  • 2 tsp instant espresso powder
  • 1/2 cup room temp butter
  • 2 oz cream cheese
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 TBSP vanilla
  • 1 egg
  • 1 cup chocolate chips
  • about 1/4  cup torbinado sugar for dusting

Instructions

  1. Whisk together Muffin and More mix, baking powder, baking soda, espresso powder, and salt. Set aside.
  2. Beat Butter, cream cheese, and sugars well.
  3. Add vanilla and egg  -beat well.
  4. Add flour mixture and combine until incorporated and comes off the sides of your bowl clean, but don’t overdo it!  Fold in chocolate chips.
  5. Wrap dough in plastic wrap and chill for at least an hour.
  6. When ready to cook Preheat oven to 350 and line a cookie sheet with parchment.
  7. If necessary to scoop allow the dough to warm up at room temp for about 5 minutes. The dough may seem crumbly – that’s ok it won’t be a dry finished cookie!  Scoop the dough by tablespoons and roll into balls.
  8. Pour the torbinado sugar into a bowl and gently roll the dough balls in the sugar to lightly and evenly coat them.
  9. Arrange the dough balls  with plenty of space on the cookie sheet. I get about 9 to a sheet.
  10. Bake for about 15 mins until edges are brown and cookie is barely set.
  11. Remove from the oven and tap the cookie sheet gently on the stove (this ensures a chewy cookie!)
  12. Allow to cool for about 5 mins on the cookie sheet before removing to cool fully on a wire cooling rack.

Tips!

I like to have two cookie sheets ready and rotating in the oven so I can get the cooking done quickly

These cookies will firm up substantially as they cool.

Makes about 3 dozen small or two dozen larger cookies, Enjoy!
