Gluten Free Camping Scones
We made these scones on a camping trip but you could certainly make them any time you’d like! This gluten free scone recipe delivers a slightly sweet cinnamon flavor and are perfect with your favorite butter and jam! Even my picky kiddo who only likes “plain things” gobbled these up! Enjoy 🫶 Josie
Ingredients
1 ½ cups Josie’s Best GF Muffin & More Mix
½ TBS baking powder
Big pinch of salt
Big pinch of cinnamon
½ cup cold butter chopped up
1 egg
½ cup half & half
2 TBS Date syrup (or sub for regular sugar)
Instructions
Mix Muffin & More Mix, baking powder, salt, and cinnamon.
Work chopped butter into flour until almost fully distributed * does not have to be a “sandy” texture as you would a pie crust but make sure the butter is not in huge clumps.
Mix egg, half & half, and date syrup (or sugar).
Add wet to dry mixture and mix into a sticky dough.
Shape into rough triangles and place in buttered skillet.
Two ways to cook:
We cooked these over a grate on an open fire at our campsite. Its best to get the fire going and
then spread out the coals/logs so the heat is evenly distributed and not flaming up too high.
Cover the scones w/ tinfoil and “bake them” on the fire for about 15 mins. or until cooked
through and not doughy.
If you don’t feel that rustic these can certainly be cooked in a 350F oven for about 15-20 mins
or until cooked through and not doughy.
