Gluten Free Bundt Cake with lemon and blueberries! Servings 1 Bundt or 1 Loaf

½ cup butter softened
1 cup sugar
3 eggs
1 tsp Singing Dog Vanilla
½ tsp lemon extract
1/3 cup sour cream
1/3 cup milk
2 cups Josie’s Best Muffin & More Mix
¼ tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup blueberries


Preheat over to 350

Mix butter, sugar, and eggs well until fluffy.

Add vanilla, lemon, sour cream, and milk – mix well.

In a separate bowl mix Muffin and More, baking soda, baking powder, & salt.

Add the dry to the wet ingredients and mix to combine.

Fold in blueberries.

Add to a well greased or parchment lined pan or bundt.

Bake at 350 for 40 mins until cooked through and golden brown.

If using a bundt let cool for about 15 minutes then gently invert onto a cooling rack-remove the pan and let cool thoroughly.
