Vegan Gluten Free Brownies

(with no refined sugar!)

I first made these vegan brownies on the tail end of a long camping trip when we were craving something sweet but had limited ingredients.   I had been wanting to create some gluten free and egg free brownies for a long time and when I saw 3 bananas that needed to be used up I was inspired! The bananas not only are a great binder to replace the eggs but they also add moisture and sweetness. One of my kiddos does not like bananas so when I make a recipe using them the result cannot be “banana-y”.

I used coconut sugar to make them refined sugar free, but you can certainly use any sugar you prefer.  Date syrup is another ingredient in this recipe and we love this one from The Date Lady; it adds sweetness and a really great flavor! .  These vegan brownies turned out so good, great texture, chocolatey, gluten free, dairy free, egg free, and vegan!  My family definitely had them for breakfast the next morning 😀  Enjoy this vegan gluten free brownie recipe ~ 🫶 Josie

Ingredients

½ cup dairy free butter of choice ( we like earth balance)
½ cup dairy free chocolate chips
3 mashed bananas
1 tsp vanilla
¼ cup of date syrup
¾ cup Josie’s Best GF Muffin & More Mix
¼ cup of coco powder
1 tsp baking powder
Pinch of salt

Instructions

Melt butter and mix chocolate chips in to melt them.

Let cool slightly and add the rest of the ingredients.

Mix well and pour into a greased baking dish (we used a pie pan)

Bake for 20-25 mins until just baked through.
