Individual Gluten Free Ham and Cheese Dutch Babies

Servings 1 pancake
Prep Time 5 minutes
Cook Time 15 minutes
Passive Time 10-15 minutes

Ingredients

6 eggs
1 cup Josie’s Best GF Muffin & More Mix
1 cup milk of choice
1/2 lb uncooked bacon (chopped)

Optional Toppings:
chopped basil
chopped dill
chopped green onions
chopped chives
chopped cherry tomatoes

Instructions

Add your chopped bacon to a oven/bbq safe pan.(we used a 10 inch size)

Place it in a cold BBQ and close the lid. Light the BBQ and heat to 375-400 degrees.

In another bowl, beat eggs and your milk. Slowly add the Muffin & More Mix in so they incorporate completely. Set aside.

Once you’ve reached the 375-400 bbq heat and the bacon is cooked, open the lid and add the batter to the pan in the BBQ- the bacon should be just getting crispy and sizzling!

Close the BBQ lid and bake in the BBQ for 15 minutes.

This will get really puffy and impressive! If your dutch baby has not puffed up at 15mins. leave it in for 2-3 more mins and then check it again.

Optional: add a bunch of chopped herbs to the top, once it’s out!

Enjoy!
