Gluten Free Pineapple Upside-Down Pancakes
These Gluten Free Pineapple Upside-Down Pancakes are so dang fun! Start with your pancake batter, I used a one of our single use bags but you can certainly use either of our other sizes and just make up a 1 cup batch. Allow your pancake batter to rest and open your can of pineapple slices (rings) and get the pan heating up with a little oil or butter. Next, place a ring on the pan and gently pour about 1/4 a cup of pancake batter on top. Once the pancake is set on the edges and a few slow bubbles are starting to pop on the top it is ready to flip! Do this slowly and make sure that you get all the way under the pineapple ring so it stays intact! After you have cooked the second side remove your pineapple pancake from the pan and top with whip-cream, coconut flakes, and a cherry 🍒 Enjoy these Gluten Free Pineapple Upside-Down Pancakes. ~ Josie
