Gluten Free Cranberry Orange Bread

Gluten Free Cranberry Bread is one of my personal favorites.  I can’t get enough of this flavor combo in the winter months!  This recipe is a great way to use up some leftover cranberry sauce from a holiday meal but it is also worth making cranberry sauce for.  So, dang, delicious and beautiful! I’ve made these loaves as gifts for friends and family as well as brought them to holiday gatherings. Gluten Free Cranberry Bread is always in my holiday meal plan.  Enjoy 🫶

Josie’s quick homemade cranberry sauce:

Ingredients:

  • 1 package fresh cranberries
  • 1/2 cup of sugar
  • 1 orange

Instructions:

Add rinsed cranberries, juice from the orange, and sugar to a pot and simmer on low heat, stirring often, until the berries start to burst and the sauce is nice and thick.  Add additional sugar to taste.  Allow to cool and enjoy!

Ingredients

1 ½ cups Josie’s Best GF Muffin & More Mix
½ tsp salt
1 tsp baking powder
½ cup room temperature salted butter
½ cup of sour cream
1 cup of sugar
2 eggs
2 tsp vanilla
Zest and juice of 1 large orange (about 1 ½ tsp zest and 3 TBS juice)
¾ cup of thick cranberry sauce

Glaze:
3 TBS powdered sugar
2-3 tsp half and half
½ tsp cinnamon
½ tsp vanilla

Instructions

Pre heat oven to 350 and spray a loaf pan well with cooking oil – line the bottom with parchment.

Mix Muffin and More, salt, and baking powder together and set aside.

Cream butter, sour cream, sugar, eggs, and vanilla until smooth.

Grate orange zest and then squeeze the juice into the butter mixture and mix to combine

Add flour mixture and mix until just combined.

Pour ½ of the batter into the prepared loaf pan.
Add about ½ of the cranberry sauce in 3 large spoonful to the top of the batter and swirl to gently combine.

Pour the rest of the batter on top and repeat the process with the cranberry sauce as well.

Bake for 25-30 mins until slightly brown and a toothpick inserted into the middle comes out with only a few moist crumbs.

For the Glaze:
Mix all ingredients well – you can add more powered sugar to make thicker or more half and half to make it thinner. Pour on top of loaf, and enjoy!
