This easy gluten free cobbler recipe is perfect for any combination of fruit or berries. Pictured here is is a strawberry rhubarb cobbler but you can use whatever you have on hand. The cobbler topping is fluffy and slightly sweet and soaks up just a tad of the berries for perfection! Enjoy with your favorite ice cream.

Ingredients

The Cobbler Topping:

The Filling:

  • 2 cups strawberries
  • 2 cups Rhubarb
  • 1 cup cup sugar

Instructions

Preheat your oven to 350

The Filling:
Toss all ingredients together and put them in a bowl to let sit.

The Cobbler Topping:
Mix Muffin and More, salt, sugar, and baking powder together. Grate very cold butter on top and toss to mix. Add milk and gently mix till just combined.

Use a slotted spoon to scoop the fruit into a baking dish. We used a pie pan but an 9X9 square dish will work well here.

Drop the cobbler topping in large spoonfuls onto the fruit.

Bake for about 45 mins until the fruit is bubbling and the Gluten Free Cobbler Topping is cooked through.
