Gluten Free Cherry Cream Muffins

These perfectly sweet muffins have a rich flavor thanks to the cream cheese; they come together quickly using our Muffin & More Mix.  The key here is to make sure that your cream cheese is at room temp so it can be mixed in very well, until fluffy, with the sugar.  Like many recipes on our website, I made this one to be versatile. I love using the cherries but this will work with basically any fruit you have on hand.  This is one of our favorite recipes to make and keep on hand for busy mornings.  Enjoy 🫶 Josie

Servings 1 dozen muffins

Ingredients

8 oz softened (room temp) cream cheese
2 eggs
1 tsp vanilla
½ cup sugar
1 cup Josie’s Best GF Muffin & More Mix
¼ tsp salt
1 tsp baking powder
1 cup halved and deseeded cherries

Instructions

Preheat oven to 350 degrees.

Mix cream cheese and sugar very well until fluffy. Add vanilla and eggs mix well.

In a separate bowl mix Muffin and More, salt, and baking powder.

Add dry mixture to wet and combine gently until no streaks of the dry mix remain.

Fold in cherries.

Fill lined muffin tins and cook for about 25 mins until tops spring back and a toothpick inserted into the
middle of one comes out with only a few moist crumbs.

Notes:
You can use any berry you want here.
For mini muffins bake for about 15mins.
These work great in donut molds for a fun twist
