Gluten Free Brownie Blondies

This recipe is pretty self explanatory, it combines our classic gluten free brownie with our fan favorite gluten free blondie.  Such a great flavor combo that not only tastes great but is a real show stopper on looks ! This is also a dairy free brownie recipe as it uses Earth Balance butter which is really a key to making the blondies a perfect amount of chewiness!

The swirl technique:

My swirl technique is to put the blondie batter on the bottom and then pour the chocolate brownie batter on top.  You then can use a toothpick, skewer, or the sharp point of a knife to make swirls in the batter.  Make sure to put the utensil you are using to the bottom of the batter (but don’t scrape and rip the parchment!) and go back and forth all the way down your pan.  Then, leaving the utensil in the pan, move it up and down the pan.  That is it- one round “hamburger style” and one “hot-dog style”!  Do not worry about perfection in the blending of the two batters, the imperfection is what makes these Gluten Free Brownie Blondies fun and they will turn out marbled, beautiful, and DELICIOUS! 6 TBS Earth Balance butter (or regular salted)
3/4 cup Josie’s Best GF Muffin & More Mix
1 tsp baking powder
1/2 tsp salt
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla
2 TBS cocoa powder
2 TBS water


Preheat oven to 325 degrees.

Heat butter in a saucepan and warm until melted and starting to brown. Set aside and let cool.

In another bowl, mix Muffin & More, baking powder, salt.

Back to the slightly cooled butter saucepan, add sugars, eggs, and vanilla. Mix well.

Pour the butter mixture into the flour mixture and mix until incorporated.

Pour ½ of the batter into a parchment lined 9×9 baking dish.

Into the other ½ of the batter add the cocoa powder and water. Mix to combine.

Pour the rest of the batter on top of the blondie batter and swirl around to gently combined the two batters.

Bake for 25 – 30 mins. until the batter is cooked through.

Allow to cool before enjoying!
