Gluten Free Apple Muffins

(Vegan too!)

This is a super simple recipe that uses apple sauce to replace eggs. ย We capitalize on that nice apple flavor and add some cozy spices that really bring it to life! ย These gluten free vegan muffins are moist and buttery (without using butter ๐Ÿ˜‰). ย My oil of choice in the recipe would be coconut ย or avocado but you can certainly use any oil you prefer! ย We use our muffin and more mix as a base which is a certified gluten free 1:1 flour blend. Ingredients

1/3 cup oil of choice
1/3 cup white sugar
ยฝ cup of unsweetened apple sauce
1 tspย Singing Dog Vanilla
1 cup (155 grams)ย Muffin & More Mix
ยผ tsp salt
1 tsp baking powder
1 tsp cinnamon
Pinch of cardamom

Instructions

Pre-heat oven to 350 degrees F.

Line muffin tins(youโ€™ll get around 6-8 standard sized muffins)

Mix oil, sugar, apple sauce, vanilla in a bowl.

In a separate bowl mix Muffin & More, salt, and baking powder and spices.

Gently mix dry into wet ingredients.

Scoop by 1/4 cups into lined muffin tins. Bake for 18-20 minutes, orย until a toothpick inserted intoย the middle comes out with only a few moist crumbs.
