Chocolate Gluten Free Muffins

They’ve become one of my kids’ favorite afternoon snacks and honestly, I don’t mind sneaking one for breakfast either. Whether you’re baking for a weekend treat, lunchbox surprise, or just because you’re craving chocolate, these muffins are always a win.

Ingredients
- 1/3 cup coco powder

1/2 tsp salt

1/4 tsp baking soda

1 tsp baking powder

1/2 olive oil

1/4 cup maple syrup
- 1/2 cup cane sugar

3 eggs
-
1 tsp vanilla

3/4 cup milk of choice
- 3/4 cup chocolate chips (dairy free if needed)
Instructions
Pre Heat oven to 350 and line muffin tins.
Beat olive oil, maple syrup, sugar and vanilla.
Add eggs, milk and mix well.
In a separate bowl mix Muffin & More, coco powder, salt, baking soda and baking powder.
Gently mix the dry mixture into the wet. Mix until there are no streaks of dry mix left but try not to overdo it.
Fold in the chocolate chips.
Fill muffin tins 3/4 of the way full (if you want big muffin tops fill them all the way) and cook for 20-30 mins. Poke with a toothpick to confirm it cooked through. Allow to cool and enjoy!
