Gluten Free Zucchini Waffles

Ingredients

Waffles

● ¼ cup butter
● 1 zucchini, grated
● 2 eggs
● ¾ cup milk of choice
● 1 tsp vanilla extract
● ⅓ cup chopped walnuts
● ¼ cup rolled oats
● 1 cup Josie’s Best Waffle Mix

Glaze

● 4 oz cream cheese, softened
● ½ cup powdered sugar
● 1 tsp vanilla extract
● 2-3 tbsp milk of choice

Instructions

1. Brown the butter by heating a small saucepan over medium heat and add the butter. Bring to a simmer and stir frequently until browned but not burnt. Remove from the heat and let cool completely.
2. Place the grated zucchini in a nut milk bag or towel and ring out any excess liquid. After this, pour into a mixing bowl.
3. Add the eggs, browned butter, milk, and vanilla, Whisk until combined.
4. Pour in the chopped walnuts, oats, and the waffle mix. Mix until smooth.
5. Heat a waffle iron and spray with cooking oil. Place about ½ cup of batter into the waffle maker and cook until golden brown and crispy. Repeat with the remaining batter.
6. To make the glaze, whip the cream cheese in a bowl with an electric mixer until fluffy. Add the powdered sugar, vanilla, and 2 tbsp milk. Mix until combined. If you want a thinner glaze, add another tablespoon of milk.
7. Serve the waffles with the glaze drizzled over top!
