You could say we’re a little biased when it comes to waffles—the “Be happy. Be kind. Eat waffles.” might give it away. But we can’t help but do a happy dance when our gluten free waffle mix cooks up like a dream. What do we mean by that? We did the hard work, so you don’t have to. When following the ingredient ratios on the bag, the result is a batter that’s the perfect consistency for fluffy golden waffles with a slight crisp to the edges (the only kind of crust we like). Top it with maple syrup or whipped cream and you’ve got a restaurant-worthy meal. If you’ve been missing waffles for allergies, this one’s for you. Gluten free, milk free, egg free, tree nut free, peanut free, and soy free, it’s got you covered. Oh, and did we mention suitable for vegan diets, too? Just sub the egg and milk for your favorite vegan products. Welcome back, breakfast.
ingredients
Brown Rice Flour, Potato Starch, Organic Cane Sugar, Arrowroot Starch, Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate) Salt, and Xanthan Gum
instructions
Mix all ingredients well. Batter should be smooth and may appear slightly thinner than conventional waffle mix. The batter will thicken as it stands! Heat waffle iron to desired temperature(medium cook preferred). Add batter to waffle iron and cook until golden brown.
Per 1 cup of dry mix add:
2 large eggs(or proportionate egg alternative)
¼ cup oil
¾ cup milk of choice
½ tsp vanilla (optional)
Per 2 cups of dry mix add:
3 large eggs(or proportionate egg alternative)
½ cup oil
1 ⅓ cup milk of choice
1 tsp vanilla (optional)
TIP: Try using coconut oil, it’s delicious!

allergy-friendly substitutes
To replace 1 egg, you can try any of the following:
- ½ large mashed banana (you may need to add additional TBSP water if your mix seems too dry)
- ¼ cup plain pureed pumpkin
- 1 TBSP flax seed & 3 TBSP water
- ¼ cup aquafaba (aka bean juice – yes just the juice from a can of beans – garbanzo beans work great!)

This mix with its published recipe is so much better than my usual recipe. I made the 2c of mix recipe on the 5lb package. The batter was thinner and very easy to use w/ my waffle iron compared to my other attempts with other recipes and mixes. I was almost out of milk so 1/3 of the milk was buttermilk. The waffles were fantastic.
