Homemade Gluten Free Ice Cream Sandwiches

These are a great make ahead treat for a party.  Although a bit of an endeavor to make, these homemade treats will wow both your gluten free and gluten eating guests, we made them for a birthday party and they were a huge hit! This filling is super creamy and decadent – you could certainly substitute your favorite ice cream as well.  Enjoy these, they do take a bit of time to make but I love that they can stay in the freezer for a treat when you need one!

Cook Time 12 minutes
Passive Time at least 3 hours- overnight freezing

Ingredients

1 batch Josie’s Best GF Chocolate Chip Cookies

4oz full fat cream cheese
2 cups heavy cream
1/4 cup cane sugar
2 tsp Singing Dog Vanilla

Instructions

1. Make the cookies per the instructions. The cookies will be very soft when they come out of the oven but finish cooking when left on the cookie sheet for about 3 mins.  Then cool completely on a wire rack.

For the filling:

1. Whip 4 oz of full fat cream cheese until light and smooth
2. Add 2 cups heavy whipping cream
3. Mix on high speed in a mixer or with beaters.
Slowly add the sugar & vanilla -continue mixing on high speed until the filling is very stiff.
4. Flip a fully cooled cookie over and place a large dollop of the filling on top of the flat side.
5. Place another cookie on top of the dollop and press gently.
6. Do this with all of the cookies and place them on a large tray.
7. Cover the tray with plastic wrap and freeze at least 3 hours or overnight.
Once frozen they are quite sturdy and can be placed in a ziplock bag for anytime! Enjoy!
