Adding some gluten free oats and nuts or seeds of choice give this waffle a nice bite and complexity. As always, use the nuts or seeds that work for you and feel free to omit them completely! The sweet cream glaze on these waffles really tops the plate off nicely and ties the whole meal together! Enjoy.

Ingredients
Waffles
● ¼ cup oil of choice
● 1 zucchini, grated
● 2 eggs
● ¾ cup milk of choice
● 1 tsp vanilla extract
● ⅓ cup chopped nuts or seeds of choice** (optional)
● ¼ cup gluten free “old fashioned” oats
● 1 cup Josie’s Best Waffle Mix
Glaze
● 4 oz cream cheese, softened
● ½ cup powdered sugar
● 1 tsp vanilla extract
● 2-3 tbsp milk of choice
Instructions
1. Place the grated zucchini in a nut milk bag or towel and ring out any excess liquid. After this, pour into a mixing bowl.
2. Add the eggs, oil, milk, and vanilla, Whisk until combined.
3. Pour in the chopped nuts or seeds, oats, and the waffle mix. Mix until smooth.
4. Heat a waffle iron and spray with cooking oil. Place about ½ cup of batter into the waffle maker and cook until golden brown and crispy. Repeat with the remaining batter.
5. To make the glaze, whip the cream cheese in a bowl with an electric mixer until fluffy. Add the powdered sugar, vanilla, and 2 tbsp milk. Mix until combined. If you want a thinner glaze, add another tablespoon of milk.
6. Serve the waffles with the glaze drizzled over top!
