1 zucchini grated
1/3 cup quick cooking GF oats
1/3 cup brown sugar
½ cup butter grated
1 tsp pumpkin pie spice
1/3 cup truwhip
1/3 cup plain Greek yogurt


Grate the zucchini onto a paper towel and allow to release some of the juices.

Mix the oats, brown sugar, grated butter and pumpkin pie spice.

Add the zucchini and mix well.

Air fry for 10 mins. at 400- this can be baked as well. When its done the butter is all melted and
the edges are starting to get brown and crispy.

Allow the zucchini mixture to cool.

Meanwhile, mix the truwhip and yogurt. You can certainly use all truwhip or all yogurt if you
want it sweeter or less sweet!

Add about ½ of the zucchini mixture to the yogurt mixture and mix well.

Use to fill crepes or anything else! The rest of the zucchini mixture can be used as a topping.
