Gluten Free Vegan No bake Peppermint Cookie Bars

“I can’t stop eating it” comes to mind with these treats! These Gluten Free Vegan No bake Peppermint Cookie Bars have a delicious cookie crust that firms up quickly using coconut oil.  Top it with some vegan chocolate and peppermint candies and you’ve got a perfect gluten free holiday dessert! You’ll need our all purpose blend the Muffin and More mix for this recipe

Ingredients

For the Bars:

1 1/2 cups Muffin and More Mix

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

1 cup melted coconut oil

1 cup brown sugar

1/2 cup whilte sugar

1 TBS vanilla

For the Chocolate topping:

1 cup vegan chocolate chips

2 drops peppermint oil or flavoring

2 tbs coconut oil

Instructions

Add all ingredients for chocolate topping to a pot on low heat and gently melt until about 2/3 of the way melted.

Stir, turn the stove off, and leave it alone.

Mix Muffin and More, baking powder, baking soda, and salt in a bowl and set aside.

Add coconut oil , sugars, and vanilla to a bowl (or stand mixer) and mix well.

Add flour mixture and mix until fully incorporated. This will be a soft batter.

Spread the dough evenly on a 11X14 pan lined with parchment.

Top with liquid chocolate mixture and spread to cover evenly.

Sprinkle crushed candy canes (or anything else!)

Cool for at least 1 hr. until chocolate is firm.

Lift out using the parchment and chop into bars and keep in the fridge!

We let ours cool outside while we prepared and ate dinner and they were perfectly ready for dessert!  .
