Gluten Free Upside Down Cake

Gluten Free Upside Down Cake with summer fruits!  This is a beautiful and delicious gluten free desert and surprisingly simple to make!  Uses our certified gluten free all purpose blend.  Enjoy 🫶 Josie

½ cup butter softened
½ cup sour cream
1 cup white sugar
1 TBS vanilla
3 eggs
1 tsp apple cider vinegar
1 ¾ Muffin and More Mix
1/2 tsp baking soda
1 tsp baking powder
½ tsp salt
2 TBS brown sugar
1 peach and 1 nectarine



Preheat oven to 325

To a springform pan add parchment to the bottom and grease well.  

Sprinkle bottom with brown sugar and top with sliced peaches and nectarines in a nice arrangement. 

In a large bowl cream sugar, sour cream, and butter

Add eggs, vanilla, and apple cider vinegar, beat well. 

In a separate bowl mix Muffin & More, baking soda, baking powder, and salt. 

Add flour mixture to wet ingredients in two parts, mixing completely but try not to overdo it!

Gently pour onto peaches in the pan and spread evenly.

Bake for about 30 minutes. Until lightly browned and a toothpick inserted into the middle comes out with only a few moist crumbs. 

Allow to cool for at least 30 mins and then release the springform and invert onto a plate.

Gently pull off the bottom parchment (now on top) to reveal your masterpiece!
