Gluten Free Spiced Pumpkin Bread

Gluten Free Spiced Pumpkin Bread is such a festive, tasty sweet bread to enjoy during the fall and winter months.  Perfectly moist and delicious, I love the spice combinations here; notably the cardamom which is (gasp) a bit expensive to purchase.  However; cardamom is also potent and you don’t need much so it does last and the depth of flavor is really worth it.  This is my favorite cardamom to purchase from Amazon.  I topped this gluten free pumpkin bread with a cream cheese topping and candied ginger.  10/10 it was gobbled up in a day! Ingredients

2 cups Josie’s Best Muffin & More Mix
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp cinnamon
¼ tsp each of ground ginger, ground cloves, ground cardamom
1 cup brown sugar
½ cup melted butter
1 cup of pumpkin
1/4 cup of milk
2 eggs
1 tsp vanilla

Instructions

Preheat oven to 350 and line a 8×8 or loaf pan with parchment paper.

Combine: Muffin and More, baking powder, baking soda, salt, all the spices, and sugar.

Add: melted butter, pumpkin, milk, eggs, and vanilla and combine in a few swift strokes.

Pour: into your prepared pan and cook for about 35-40 mins until a toothpick inserted into the middle comes out with only a few moist crumbs.

Frost with the very best Whipped Cinnamon Cream Cheese Frosting!
