Gluten Free Peach Pie Crepes

This gluten free crepe recipe is simple and delicious with all the flavors of peach pie!  Make this recipe when the peaches are ripe in the summer or in winter with frozen peach pieces!  The peach sauce is very simple to make and works well with dairy free butter.  We used whipped cream as the filling, you could use yogurt or any dairy free filling you enjoy!

Peaches are one of my favorite fruits to cook with as the flavor condenses well and needs little to no added sugar! Enjoy this delicious gluten free recipe!

Ingredients

A batch of Josie’s Best GF Crepes

2-3 ripe peaches

1 TBS of butter (can be dairy free)

Pinch of cinnamon

Your favorite whipped cream or yogurt (can be dairy free)

Instructions

Cook your gluten free crepes per our instructions.

Roughly chop the peaches and add them to a shallow pot on low heat.

Add the cinnamon and butter.

Stir and slightly mash the peaches as they cook.   You want this to be a think sauce with a few peach pieces still in tact.

Once the peaches start simmering let them cook for about 5 minutes.

Take the pot off of the heat and allow to cool.

When you are ready to serve, fill the crepes with whipped cream or yogurt and generously top with your peach sauce.
