Gluten Free Lemon Peach Crumble

This is such a delicious crumble and the flavors scream summer!  This gluten free dessert is sort of a pie crumble hybrid….. there’s not bottom to the pie, you just dump the fruit right in a butter pie dish (EASY!).  I do make a gluten free pie crust here but it is frozen, in ball form, and there’s no rolling needed!  You just grate it right on top of the fruit and bake- that’s it.  This is so easy and comes together very quickly.   Enjoy 🥧 Josie

Cook Time 25-30 Minutes
Passive Time 1 hour (the crust)

Ingredients

1 Josie’s Best GF Pie Crust  frozen for at least 1 hour

5 peaches not too ripe (medium firm to the touch)
1 large lemon
½ cup +1 TBS of white sugar
Cheese grater

Instructions

Pre Heat oven to 350

Slice the peaches into even slices (I get 8-10 slices per peach) – leave the skin on!

Add peach slices to a bowl and toss with ½ cup of sugar- let it sit for about 5 mins.

Squeeze the juice of ½ of the lemon on the peaches and toss well- there will be some juice at the bottom of the bowl.

Add the peaches to buttered pie pan using a slotted spoon so you leave the extra juices in the bowl (they are delish and can be used for something else!)

Remove your pie crust from the freezer and grate it on top of the peaches using the wide cheese grater section.

Evenly spread the grated crust on the peaches

Sprinkle with the zest of the other half of the lemon on top of the pie crust and sprinkle the extra TBS of sugar on top.

Bake at 350 for about 25 mins until the top is beginning to brown and the juices of the pie are just starting to bubble.

Remove the pie from the oven and let sit for another 15mins before serving.
