Gluten Free Dutch Baby Recipe

aka Gluten Free German Pancake

This Gluten Free Dutch Baby is something we make on the regular at the JBGF household. I grew up calling it a German pancake, some say oven pancake but they’re all the same and truly delicious!

This gluten free recipe has lots of protein from the eggs and keeps everyone happy and full on a day of adventures. This dutch baby is simple to make using a few basic ingredients and it is impressive when it comes out of the oven.

For this recipe you will need:

  • 1 cup (in our 18oz bags there is about 3 cups) The Muffin and More mix
  • A 9-10inch oven safe skillet
  • A mixing bowl and whisk
  • 6 eggs
  • 1 cup milk of choice (dairy free or regular)
  • 4 TBS butter or coconut oil
  • 1/4 tsp salt

You can use full dairy milk or a dairy free alternative like Oat Milk. The dairy free version will not brown quite as well as the dairy version but it’s just as delicious. The same idea goes for the butter, you can use a dairy free butter or Coconut oil (our preference).

You can top this Gluten Free Dutch Baby anyway you like, lemon and powdered sugar is the classic way to enjoy it. We often do some jam & plain yogurt or fresh berries and a dollop of whipped cream. One of my favorite things about this recipe is that everyone gets to use their own favorite toppings.

Even my pickiest eater enjoys this breakfast (plain with just a sprinkle of powdered sugar, please!) My most adventurous (hot sauce and plenty of cheese for him!) does as well – everyone is happy and eating!

For a fun twist on this recipe prepare this exactly the same way except use deep muffin tins instead of a skillet.

Pour the batter into the preheated tins until they are only about 1/3 of the way full. The result will be some individual gf dutch babies that everyone will enjoy! If you would like the cliff notes on this recipe check out the video below the recipe.

This recipe uses our gluten free all purpose flour blend, The Muffin and More mix. The ingredients in this blend are: Potato Starch, Brown Rice Flour, Sorghum Flour, Tapioca Starch, and Xanthan Gum.

Place butter in an oven-safe skillet (I used 10 inch)

Place skillet in cold oven and turn the oven on to 400.

Note that this will get tall in the oven so make sure there is ample space in between the oven racks for it to do so!

Beat eggs very well in large bowl until slightly frothy.

Add milk, beat well. Slowly add in Muffin and More Mix and salt, so they incorporate completely.

Carefully open (now preheated) oven and pour batter on top of the melted butter in the hot skillet. Use caution here! Use oven mitts & keep your face away from the hot butter!

Work quickly in this step so you don’t loose too much heat from your oven.

Bake the dutch baby for about 15 minutes or until the bottom is set and edges are tall and golden brown.This will rise above the rim of your baking dish in the oven!

If your dutch baby has not puffed up at the 15 minutes mark, leave it in for 2-3 more minutes and then check it again.

The dutch baby will fall after it comes out of the oven, this is normal and has no effect on the taste.

Serve this while it is still warm. Add your favorite toppings—think plump berries, a sprinkle of powdered sugar & squeeze of lemon, or a drizzle of maple syrup. It’s your breakfast canvas, so get creative!
