Gluten Free Breaded Chicken Recipe

Gluten Free Breaded Chicken Recipe for salads, or just some yummy chicken for the kiddos!  You can make the salad in the full recipe below or just use the chicken recipe for anything you want! We love this salad because the kiddos love the chicken and get to pick the veggies they will eat and the adults get to eat the full salad.  A gluten free meal WIN!  We made this using the dressing from our friends over at Toby’s Family Foods – you can’t go wrong with their delicious dressings and dips!  Enjoy 🫶 Josie

1 cup Josie’s Best Muffin & More Mix
1 tsp sea salt
1 tsp paprika
1 tsp garlic powder
1/2 tsp cracked pepper
2 Boneless Skinless Chicken Breasts(thawed)
1 apple
3 carrots
3 celery stalks
1 cucumber
pomegranate seeds
red leaf lettuce
Toby’s Ranch or Blue Cheese Dressing


Slice up veggies and lettuce, put aside.

Slice up chicken breasts into equally slices.

In a gallon sized ziplock add: Muffin & More Mix, sea salt, paprika, garlic salt and cracked pepper. Add sliced chicken into the bag and shake to coat.

Heat a pan using avo oil. and remove chicken from the bag and place into heated oil. (watch the splatter)

Cook the chicken until it’s cooked(165F) about 4 mins per side depending on the thickness of your strips.

Assemble your salad with your sliced veggies and lettuce.
Add your cooked chicken on top and drizzle your dressing!
