Gluten Free Blondies

These gluten free blondies are a favorite treat in the JBGF extended family!  I have made them for many gatherings including my brothers wedding! These blondies are buttery and chewy goodies with just a perfect amount of bite!  They get big and puffy in the oven then fall and caramelize the last 10 mins of cooking. Sweet and a tiny bit salty, you can definitely do them with or without the gluten free Oreos but we highly recommend it! Enjoy!

Ingredients

6 TBSP Earth Balance butter
3/4 cup Muffin and More Mix
1 tsp baking powder
1/2 tsp salt
6-8 crushed GF Oreos
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla

Instructions

Preheat oven to 325

Heat butter in a saucepan and warm until melted and starting to brown. Set aside and let cool.

In another bowl, mix Muffin & More, baking powder, salt, and crushed Oreos.

To the slightly cooled butter add sugars, eggs, and vanilla. Mix well.

Pour the butter mixture into the flour mixture and mix until incorporated.

Pour batter into a parchment lined 9×9 baking dish.

Bake for 25 – 30 mins. Check them at about 20 mins and the batter should look puffy and have risen – watch them for the last 10 mins as they will fall and caramelize and you don’t want the sugars on the edges to burn! Allow to cool before enjoying!
