Something we keep running out of is snacks and crackers. These are fun, quick, and easy to make using very simple ingredients. They will taste like whatever you season them with so there are a lot of possibilities here! Made with Josie’s Best Gluten Free Muffin and More Mix.
Ingredients
- 1 cup muffin and more mix
- 1/2 tsp salt
- 1/2 tsp sugar
- pinch pepper
- 1 TBS olive oil
- 1/2 cup cold water
Instructions
*this was a plain “kid” cracker. I also made a grown up version with an additional 1/2 tsp pepper and a TBS of dried herbs.
Blend all dry ingredients well. Add water and oil and mix until a dough forms shape into a ball and let rest on large rectangle of parchment (you will use this to roll it out).
Preheat your oven to 400 while the dough is resting.
Place other piece of parchment on top of your dough and roll very thin
Gently slide parchment onto a cook sheet.
Bake for about 5-8 mins. until edges turn up and color is starting to turn brown.
Flip the cracker over and bake for another 5-8 mins. until crispy and edges are dark brown.
Allow to cool and break into desired sizes.
Tips:
When the cracker is ready to flip it will not stick at all – if it is still sticky to the parchment cook for longer on the first side.
The thinner the dough the faster it will cook so keep an eye on it
