Gluten Free Apple Muffins
(Vegan too!)
This is a super simple recipe that uses apple sauce to replace eggs. We capitalize on that nice apple flavor and add some cozy spices that really bring it to life! These gluten free vegan muffins are moist and buttery (without using butter 😉). My oil of choice in the recipe would be coconut or avocado but you can certainly use any oil you prefer! We use our muffin and more mix as a base which is a certified gluten free 1:1 flour blend. These muffins will come together in a snap, make the kitchen smell great, and disappear quickly! Ingredients
1/3 cup oil of choice
1/3 cup white sugar
½ cup of unsweetened apple sauce
1 tsp Singing Dog Vanilla
1 cup (155 grams) Muffin & More Mix
¼ tsp salt
1 tsp baking powder
1 tsp cinnamon
Pinch of cardamom
Instructions
Pre-heat oven to 350 degrees F.
Line muffin tins(you’ll get around 6-8 standard sized muffins)
Mix oil, sugar, apple sauce, vanilla in a bowl.
In a separate bowl mix Muffin & More, salt, and baking powder and spices.
Gently mix dry into wet ingredients.
Scoop by 1/4 cups into lined muffin tins. Bake for 18-20 minutes, or until a toothpick inserted into the middle comes out with only a few moist crumbs.
