Gluten Free Dairy Free Muffin Recipe

Gluten and Dairy Free Muffins like you remember! These are buttery and sweet and taste just like the full gluten bakery style muffins I had as a kid! Add any fruit you want here to make them your own.  This is a go to weekday recipe in our home because it comes together so quickly and easily and works with whatever we have on hand.  Enjoy! 🫶 Josie

Ingredients

1/2 cup oil of choice  (we used avocado as it’s very neutral)

1/3 cup white sugar

2 eggs

1 tsp Singing Dog Vanilla

1 cup(155 grams) Muffin & More Mix

¼ tsp salt

1 tsp baking powder

3/4 cup berries of choice (frozen or fresh) or chocolate chips!

Instructions

Pre-heat oven to 350 degrees F.

Line muffin tins(you’ll get around 6-8 muffins if you are using standard sized muffin liners)

Mix oil, sugar, eggs, vanilla in a bowl.

In a separate bowl mix Muffin & More, salt, and baking powder.

Gently mix dry into wet ingredients.

Fold in berries.

This will be a fairly thick batter – scoop by 1/4 cups into lined muffin tins.

Bake for 15-22 minutes, or until a toothpick inserted into the middle comes out with/ only a few moist crumbs.
