What dairy free alternatives can I use in your gluten free mix?
We recommend almond milk if you can tolerate nuts, and coconut or oat milk if not. Here is a list with all of our suggested alternatives.
What egg free alternatives can I use in your mixes?
We recommend using applesauce or a ripe, mashed banana for muffins, quick breads, etc. These alternatives add a delicious flavor to sturdier bakes, but create a too-soft texture for waffles or pancakes. For these, we recommend a flax or chia egg (recipes here and here). You’ll use about a ¼ cup measurement for the substitute (in other words, 1 egg = ¼ cup). Are your mixes gluten free certified ?
Yes, all our mixes are certified gluten free by GFCO.
Are your mixes made in a top 8-allergen free facility?
Yes, each and every mix is made and packaged in a dedicated top 8-allergen free facility.
What are your mixes free from?
Our mixes are free from all the main allergens—gluten, dairy, soy, egg, peanuts, tree nuts, pine nuts, cashews, fish, shellfish, coconut, flax seed, and sesame. Plus, all of our products are non-GMO.
Are your products tested for gluten?
Yes, we test all incoming ingredients to 5-10PPM. In addition, we spot test outgoing finished products to 5-10PPM.
Is there corn in your gluten free mix?
Yes, the amount is minimal and comes from our baking powder. Many of our customers with mild corn intolerance have reported that our mixes are gentle and our products work great for them.
What size crepe pan should I use?
Any size pan will work—it is really a question of matching the amount of batter you use to the size of your pan. In a 8-inch pan we recommend 1/4 cup. In a 12-inch pan a 1/3 cup. Does the waffle mix work for pancakes?
Great question! Yes, it certainly does. Simply cut the oil in half and use 1 cup of milk per 2 cups of mix (ex. ½ cup milk for 1 cup mix). If you like really fluffy pancakes, you may want to add ½ tsp baking powder; but it’s not necessary. The thickness of the pancakes is always adjustable with the milk ratio.
