We prefer a soft snickerdoodle and cook for about 9 mins (depending on the size of the balls) . Some like crispy snicker-doodles and you may need to increase the cook time if that is what you are looking for.

To make these little nests, press the bottom of a spoon into each cookie when they are still hot!

Add whatever you prefer to your nests, and serve them to your Easter Guests!

Ingredients

For Cookies:
1/2 cup softened butter(or dairy free butter)
1/2 cup white sugar
1 egg
1 tsp vanilla
1 3/4 cup Muffin and More mix
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp cream of tartar(or apple cider vinegar)

For Cinnamon Sugar:
1/4 cup white sugar
1 tsp cinnamon

Instructions

Preheat the oven to 350 degrees.

1. In a bowl, cream sugar and butter until very smooth. Then add egg and vanilla and mix until smooth.

2. In a separate bowl combine the muffin and more mix, baking soda, baking powder, salt, cinnamon, and cream of tartar and mix well.

3. Add the GF flour mixture to your butter, sugar mixture and mix until combined.

4. Roll into balls (I do about 1 TBSP size) and then roll that ball in your cinnamon sugar mixture.

5. Place cinnamon balls on a parchment lined cookie sheet and bake at 350 for 8-10 mins.

Cookies will be quite soft when they come out – let cool and they will harden enough to handle.
