- 1 cup Josie’s Best GF Pancake Mix
- 2 TBS Oil of choice or melted butter
- 1/4 cup choice of milk
- 1/2 tsp vanilla
- 1/4 lemon simple syrup
- 1-2 pieces of lemon rind from syrup
Mix eggs, oil, milk, vanilla, and simple syrup until frothy.
Chop lemon and lemon rind as fine as you can. Tip: more lemon= more lemony taste so adjust as you like it!
Gently mix the pancake mix and lemons into the wet ingredients.
Fold the blueberries in.
Allow the batter to rest while the griddle heats up.
Cook on medium-low heat flipping once bubbles just start to break on the top (uncooked side).
