Gluten Free Liege Waffles

Liege waffles are sweet waffles made with pearl sugar. You can find pearl sugar at most specialty food stores and online. You can sub brown sugar and the recipe will work but the pearl sugar is so yummy and creates pockets of caramelized sugar that I highly recommend!

These take a little extra time and effort but they are worth it! One of my great joys is waking up early, brewing a strong pot of coffee and making a special breakfast for my boys. This is a perfect recipe for that and there’s a nice rise time to sip some coffee in peace while the house is quiet.

This is also a perfect opportunity to create a “restaurant at home” – have the kiddos make place settings and a center piece while the dough is rising. They can even create little menus! Then sit down and enjoy a 5 star breakfast at home that YOU made!

Ingredients

1/3 cup water
1/2 cup milk of choice
1/2 cup oil of choice
1 TBS vanilla
2 eggs
1 1/2 tsp yeast
2 cups Josie’s Best GF Waffle Mix
1 tsp cinnamon
1/4 cup pearl sugar

Instructions

Heat the oil (coconut oil is perfectly delicious here), milk, vanilla, and water on the stove in a small saucepan until it is warm but not boiling. Remove from the stove and pour into a large mixing bowl.

Whisk eggs into the warm milk mixture (make sure its not too hot or you will cook your eggs!)

Sprinkle the yeast on top of the warm mixture and allow to proof for a few mins. (if you know your yeast is fresh you can skip the proofing part)

Add waffle mix and cinnamon. Mix until combined but don’t overdo.

Cover with a clean kitchen towel and allow to rise for 30mins –1hr. It will get bubbly, big and smell AMAZING.

When ready to cook fold in the pearl sugar very gently while your waffle iron is pre-heating.

Cook on a regular waffle iron until golden brown.
