Gluten Free Irish Soda Bread

This slightly sweet easy gluten free Irish Soda Bread recipe is delicious and easy to make! We made this originally as a St. Patricks day recipe but my kiddos loved it and I’ve made it several times since.

This comes together easily and is perfect with a large smear of butter. YUM! Traditionally there’s raisins in this bread but we are not fans so I omitted them. If you do like raisins you can add a hearty 1/2 cup here.

I highly recommend using the caraway seeds as they make the flavor of the bread.  Caraway seeds have a licorice like taste that can be strong but work well and are not overpowering in this recipe. Do not confuse them with Cumin seeds which look similar but have different flavor profiles.

Fun Fact. The traditional cross on top of Irish Soda Bread comes from the Southern Ireland where the inhabitants believed that adding a cross to their bread loaves helped keep evil spirits away and protect the family. This is something that has carried on for generations!

You will not need any special equipment for this recipe. You will need the following:

  • Parchment paper
  • Baking sheet
  •  Josie’s Best GF Muffin & More Mix (you will use 2 cups in this recipe and our 18oz bags have about 3 1/2 cups per bag)
  • sugar, salt, baking powder, baking soda
  • caraway seeds – you should be able to find these in the spice section of your local grocery store.
  • 3 TBSP shortening (regular or vegan butter would work here too)
  • eggs
  • plain full fat yogurt
  • milk (dairy free milk works as well)

I started creating my own mixes when I had to change my diet because of a gluten intolerance. I was not satisfied with the taste and texture of other products on the market. I wanted something that would be delicious and satisfying no matter what your dietary needs were.

My dad is a chef and he pushed me to keep refining my recipes until we got the flavor and texture absolutely … perfect! The extra work paid off – people tell me all the time that taste is what sets our mixes apart from other GF brands.

In the beginning, friends started asking me to share my mixes with them and eventually a local restaurant added my pancakes to their menu.  We started selling at farmer’s markets and expanded from there.

Ingredients

For Bread

2 cups Josie’s Best GF Muffin & More Mix (= 330g MM)

1/4 cup sugar

1/2 tsp salt

1 tsp baking powder

1 TBSP caraway seeds

3 TBSP shortening (regular or vegan butter would work here too)

1 egg

1/2 cup plain full fat yogurt

1/2 cup milk (dairy free milk works as well)

1/2 tsp baking soda

For Egg Wash

1 egg yolk

2 TBSP of milk of choice

Instructions

Preheat your oven to 350 and line a baking sheet with parchment paper.

Tip: if you crinkle the parchment into a ball first, then lay it out onto your baking sheet it will stay in place!

Whisk together Muffin & More, sugar, salt, baking powder, baking soda, and caraway seeds.

Cut in (like you would with pie crust) the shortening.

Tip: I use a cheese grater for this job by grating the butter or shortening (just like you would cheese) and then cutting it into the flour mixture. This makes the job faster and easier!

In a separate bowl whisk together the egg, yogurt, and milk.

Dump the milk/egg mixture into the dry mixture and mix with a spatula until it comes together into a wet dough.

Turn out dough on the parchment and shape into a dome about 6 inches across.

Tip: you can get your hands slightly wet to shape the dough and it will be less sticky to handle.

Score the top of your loaf with a big X.

In a small bowl whisk together the egg yolk and milk for the egg wash. Brush this on top of your gluten free soda bread loaf.

Bake the loaf for about 30 minutes until the top is golden brown and the middle is cooked through.

All this to cool to room temperature before slicing and enjoying with a generous dollop of butter. Irish Soda Bread is delicious with a cup of tea or coffee in the moring.
