Gluten Free Vegan Peanut Butter Banana Muffins SO yummy, anyone will love these! Made with our Muffin and More mix
These are super delicious-our family can tolerate peanut butter(we have tree nut allergies) BUT you can use any nut or seed butter that works for you here!
Ingredients
1 ½ cups Muffin & More Mix
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ tsp cinnamon
1 tsp vanilla
½ cup brown sugar
¼ cup creamy peanut butter
¼ cup oat milk
3-4 large mashed bananas
Chocolate chips (optional)
Instructions
Preheat oven to 350, line muffin tins with paper liners.
Mix Muffin & More, baking powder, baking soda, salt, and cinnamon and set aside.
In a separate bowl mix sugar, peanut butter, milk and mashed bananas until smooth.
Add the dry ingredients to the banana mixture and fold in until fully incorporated, but don’t over do it.
Add about 1/3 cup batter per muffin tin to evenly fill a dozen muffins. Optional: Top with chocolate chips!
Bake for about 25 mins or until a toothpick comes out with only a few moist crumbs.
