This is really yummy, soft, light, bread that is great plain, toasted, or for sandwiches!

Servings 1 Loaf
Prep Time 15 minutes
Cook Time "quick setting" 2 hours
Passive Time N/A

1 ¼ cup very warm water

2 room temperature eggs

2 TBS Molasses (molasses adds great flavor depth, but any sweetener will work – agave is also great!)

1 TBS Apple Cider Vinegar

1/3 cup of oil (any oil will work – we recommend neutral flavored olive oil)

2 ¾ cup Muffin and More Mix

1 ½ tsp sea salt (this is totally a taste preference; 1 tsp works great too)

1 ½ tsp yeast

Follow the ingredients list and add them in order to your bread machine as listed.

Cook on “quick” setting which, on my bread machine, is a 2-hour cycle.

Gluten-free bread often does not handle a double rise well which is typically the basic setting on bread machines. We recommend a single rise cycle with a medium crust.

It’s important that your yeast is fresh (we keep ours in the fridge and it will last!)

Remove the pan from your bread machine right away when it is finished, gently tip the pan upside down to remove the loaf from the pan.

Allow the loaf cool completely on a wire rack before storing.

Top with your favorite jam, enjoy!
