Ingredients
- 2 cups Josie’s Best Gluten Free Muffin and More mix
- 2 TBS ground flax seeds
- 2 tsp double-acting baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup avocado oil
- 1/2 cup organic cane sugar
- 2 eggs
- 3-4 ripe bananas
- 1/3 cup plain yogurt
Instructions
Preheat the oven to 350 degrees F.
Grease or line a loaf pan with parchment.
In a medium bowl, combine Muffin and More mix, flax seed, baking powder, baking soda, salt, and cinnamon then set aside.
In a separate bowl, or a stand mixer fitted with the paddle attachment mix: oil , sugar, eggs, vanilla, mashed bananas, yogurt and mix well.
Add half the dry ingredient mixture to the wet ingredients in the stand mixer and mix gently.
Follow with the rest of the dry ingredients, mixing to combine.
The batter should be well mixed, but try not to over mix!
Add the batter to the prepared loaf pan.
Bake the loaf for about 1 hour or until a toothpick inserted into the middle comes out with only a few moist crumbs.
