Gluten Free Vegan Carrot Spice Waffles

This gluten free vegan waffle uses aquafaba (aka bean juice!) as the egg.  1 can of garbanzo beans works great, simply drain the beans from the can and save the juice! That’s your vegan “egg” in this recipe.  This option as an egg substitute works really well for many of our recipes.   In this gluten free vegan recipe there is also the great flavors of carrots and cinnamon.  Enjoy! 🥕 Josie

Ingredients

1 cup Josie’s Best GF Waffle Mix
½ cup aquafaba (bean juice)
½ cup oat milk
2 TBSP oil of choice
1 tsp vanilla
1 tsp cinnamon
¼ cup shredded carrots

Instructions

Mix all ingredients well.
Cook in preheated, lightly oiled waffle iron.
Top and enjoy!
