Gluten Free German Pancake Recipe
- 6 eggs
- 1 cup Josie’s Best GF Muffin & More Mix
- 1 cup milk of choice
- 1/4 tsp salt
- 4 TBS butter or coconut oil
Place butter in an oven-safe skillet (I used 10 inch)
Place skillet in cold oven and turn the oven on to 400
Beat eggs very well in large bowl until slightly frothy.
Add milk, beat well. Slowly add in Muffin and More Mix and salt, so they incorporate completely.
Carefully open (now preheated) oven and pour batter into hot skillet. (use oven mitts & keep face away from hot butter!)
Cook for about 15 minutes or until the bottom is set and edges are tall and slightly browned.
This will get really puffy and impressive in the oven!
Serve with powdered sugar and lemon
