Easiest Gluten Free and Dairy Free Muffins

These are buttery and sweet and taste just like the full gluten bakery-style muffins I had as a kid! Made with Josie’s Best Gluten Free Muffin and More Mix.

Ingredients

  • 3/4 cup oil of choice
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup water
  • 1 cup Josie’s Best Muffin and More
  • ¼ tsp salt
  • 1 tsp baking powder
    • ½-1 cup berries of choice (frozen or fresh) *I used blueberry but any kind will work

Instructions

Pre-heat oven to 325 and line muffin tins (about 2 dozen mini or 1 dozen regular)

Mix well: oil, sugar, eggs, vanilla, and water

In a separate bowl mix: Muffin and More, salt, and baking powder

Gently mix dry into wet ingredients

Fold in berries

Fill muffin tins and cook for 15-25 mins depending on the size of your muffin tins.
