Best Gluten-Free Cornbread Recipe

Ingredients

  • 3/4 cup Josie’s Best GF pancake mix
  • 1 tsp baking powder
  • 3/4 cup fine ground cornmeal
  • 1/4 tsp salt
  • 1TBS Sugar (can sub coconut sugar)
  • 1 Egg
  • 1 cup milk (can be Dairy free)
  • 4 TBS melted Butter (olive oil for DF)

Instructions

  1. Wisk dry ingredients together.
  2. Wisk wet ingredients together very well.
  3. Add dry to wet and mix well.
  4. Allow to rest for about 10 mins.
  5. Put in parchment lined 8×8 pan
  6. Cook at 375 for 20-25 mins

* can do some add ins like cheddar cheese, blueberries, green chilies – fold in after step 3!
