These are a fun way to add some color in your pancakes!

Ingredients

2 cups Josie’s Best GF Pancake Mix
3 large eggs (or proportionate egg alternative)
4 TBS oil
1 cup + 2 TBSP milk of choice
1 cup blueberries (fresh or frozen)
1 cup strawberries (fresh or frozen)

Instructions

Mix together eggs, oil and choice of milk.
Add in “The Pancake” mix.

Pour same amount of pancake batter across 3 bowls. Set aside.

In another bowl, make the “blue” coloring – add the blueberries and mash! If they are frozen, quick micro to defrost.

In another bowl, make the “red” coloring-add the strawberries and mash! If they are frozen, quick micro to defrost.

Add your fruit coloring above to 2 of the bowls that you have poured regular batter into. Mix. (if your pancake batter is too thin after you’ve added the fruits, simply add a little dry pancake mix to gain the right consistency)

So you should have 3 bowls of batters now! Red(strawberry) White(plain) Blue(blueberries)

Cook like regular pancakes!
