A healthy, gluten free chicken apple salad!

1 cup Josie’s Best Muffin & More Mix
1 tsp sea salt
1 tsp paprika
1 tsp garlic powder
1/2 tsp cracked pepper
2 Boneless Skinless Chicken Breasts(thawed)
1 apple
3 carrots
3 celery stalks
1 cucumber
pomegranate seeds
red leaf lettuce
Toby’s Ranch or Blue Cheese Dressing


Slice up veggies and lettuce, put aside.

Slice up chicken breasts into equally slices.

In a gallon sized ziplock add: Muffin & More Mix, sea salt, paprika, garlic salt and cracked pepper. Add sliced chicken into the bag and shake to coat.

Heat a pan using avo oil. and remove chicken from the bag and place into heated oil. (watch the splatter)

Cook the chicken until it’s cooked(165F) about 4 mins per side depending on the thickness of your strips.

Assemble your salad with your sliced veggies and lettuce.
Add your cooked chicken on top and drizzle your dressing!
